Healthy Stuff

So in my last post I mentioned those Chinese exercises. Well I didn't mention the yummy pumpkin muffins that were made at this activity as well, and this stuff called SALBA. It's kinda like flax seed, only better. You can add it to anything. No taste. It was in those pumpkin muffins. I will post the recipe because they were THAT good. Very light and delicious. Anyway...I just ordered me some of that SALBA seed and am pretty excited to get it and start using it!

Here's a little blurb on the stuff:


Researchers say that "Gram for gram, this amazing seed packs awesome amounts of Omega 3 fatty acids, plus:

* 6 times more calcium than whole milk
* 15 times more magnesium than broccoli
* 3 time more antioxidant power than fresh blueberries

It has been shown to protect you from "poor digestion . . . high cholesterol . . . heart and artery weakness . . . and even boneloss! Plus it packs loads of vitamins and antioxidants."

And now, for the yummy recipe!

PUMPKIN MUFFINS

(Makes 12 regular muffins or 26 mini size) I recommend the mini size...they are much more fun.

Ingredients: ¾ cup brown sugar
1/3 cup sugar
½ cup butter, softened
1 egg, beaten
1 cup canned pumpkin
2 cups whole wheat flour
¼ teaspoon baking soda
1-2 teaspoons cinnamon
1 tablespoon baking powder
¾ teaspoon salt
½ cup milk
(1/3 cup chopped nuts – optional)

Preparation:

Preheat oven to 375 degrees F.

Grease or spray a standard sized muffin pan with non-stick cooking spray.

Cream butter and sugars with a mixer on medium speed until fluffy. Beat in egg. Add pumpkin and nuts or salba.

Mix dry ingredients together well and add to pumpkin mixture, alternating with milk. Blend just enough to mix ingredients.

Spoon into prepared muffin pan and bake for 20 minutes (mini size bake 16 minutes).

Neglected Piles

Ok, I wish I had photographic evidence to post and show you REALLY how messy my house is, and how badly it needs a good cleaning. And really, I should get my butt off the laptop, and get to work. BUT...it is 10:41 p.m. And I am tired. And Jason just left for work. And Jay Leno is on...sad, but it's the ONLY thing on. And last but not least, I am LAZY, and a little sore.
Last night at Young Womens, we had Stake Fitness night. Apparently my big fat butt is more out of shape than I thought. We did this really cool Chinese Yoga type thing...hold on. It's called...Luk Tung Kuen. I had to look that up. It is this set of like 36 movements and little excercises that is supposed to make you into a healthier you. Here's a little blurb.

LUK TUNG KUEN (LTK) is the Cantonese name for 3 Chinese characters – 六通拳 . It is also called LTK for short. It is a form of exercise which comprises of 36 movements involving all parts of the human body with the purpose of promoting circulation of blood and strengthening nerves and muscles. Some movements brighten the eyes, promote coordination, normalize blood pressure and improve memory.

Look it up. It's fun and awesome.

So back to my post title..."neglected piles." Sitting in my living room right now, I count three piles. And looking into the bathroom from here, I can count 1 more gigantic laundry pile...and I will spare you the rest of the piles. But tomorrow is another day. Let's hope.

And also. I am officially done nursing. It's bitter sweet. I loved it. But I am ready to be done, and Makayla has been gradually weening herself. I am feeling a little bit sore... I didn't exactly plan on Monday being my last day of nursing, and didn't "cherish" those last few moments like I would have. It just worked out that way. I was down to one feeding just before bed time. So she nursed Monday night, and then Tuesday, I had YW, so the hubby put her to bed while I was gone, and she didn't nurse. So then I made the decision to not feed her tonight before bed. :(
I am going to miss it.




And just because I think this pic is the cutest ever...

And look how cute my hubby is getting me flowers and one of my favorite perfumes! And I wish I could share the card. But I'm keeping that just for me. Precious.

Belated

A post. I have been a total slacker...I have 1st birthday pics to post of the little miss...and what can I say, but I am lazy and have a TON of work that I am behind on...and yes, the only time I get to blog is while I am at work, usually during my leftover lunch minutes. Of which I have none. But you are in luck, I seem to have found a few minutes today...hooray!
I guess these pics are kind of in backward order...so....read backward. I'm too lazy to change them all around!!
HAPPY BIRTHDAY MAKAYLA!!
She got her foot in the icing and then got irritated.
She looks EXACTLY like Jason did at this age. And just a teeny tiny bit like me. Haha.
She did NOT want to get messy...such a little priss! She'd get it on her hands, then wipe it on her tummy and look at me like "why are you not cleaning me off mom? What the heck?!"
She would only eat it if we hand fed it to her. That's Grandma feeding her a big piece.
I LOVE this pic. She was so interested in the candle, and fire...looks like the pyro gene was definitely passed down, she tried to touch the flame, got a little yelled at, and then got reeealllly upset and cried and then would have nothing to do with her cake. Oh well.
This pic just made me laugh. Jason is obviously thinking it's a cool present, and Makayla is trying to look in and see what it is, and Dillon's arm is flying through creating a blur on the left. Good times.
New shoes, and very CUTE new ones...I wish they made them in my size...that's how cute!
This was just too cute, Makayla was a little unsure of how to go about opening her gifts, so her cousin Dillon was helping her out, which I was very grateful, otherwise it would have been a VERY long night.
Don't ask why the cake is blue, and not pink...I was doped up on cold medicine, insanely crabby, had a cranky child, and I reached right past the red food coloring and grabbed blue. Oh well. She'll live right!?
And these two are just cute...they were the day before her birthday, and she was in a super cute mood!



And on a totaly unrelated random note, I saw THE cutest linen napkins with little bluebirds on them in S.E. Needhams today, and was THISCLOSE to getting a bunch. But I held back. Maybe next time I go in there...haha. Cara, you would die. They would look SO cute with your Bluebird plates!!
